IMBB # 24: Lime Tuna on hot Couscous

I hope you will enjoy this recipe which I have choosen for this edition of IMBB "Make it in 30 Minutes", which is hosted by Too many chefs . This recipe was supposed to join the last german foodblog event with the theme fish. But I couldn’t present it. It’s a delicious meal that takes 30 minutes to prepare and is even ideal for guests. According to the recipe it takes 20 minutes but give yourself more time;) I need more than 20 minutes :).

Lime Tuna on hot Couscous
400g tuna filet, sushi quality
50g fresh ginger
6 kaffir lime leaves
100g couscous
0,2l chicken broth
3-6 drops tabasco (red pepper sauce)
1 carrot
6 green onion
1clove of garlic
1 tablespoon coriander, chopped finely
1 teaspoon curry powder
1 teaspoon honey
Olive oil (extra virgine), sea salt and freshly ground black pepper, soy sauce

Peel ginger and diced it. Chop coriander and lime leaves finely. Portion your tuna filet in cubes (as you see here in the recipe). (I didn’t cut in cubes. I had two so beautiful filets, I didn’t want so destroy this look.). Lay the tuna pieces in a casserole dish. Season tuna pieces well with pepper and marinate with soy sauce, chopped coriander, lime leaves, olive oil and the half of the ginger.

Peel carrot, garlic and dice them fine. Wash green onion and cut into small rings. Next chop the kaffir lime leaves finely. Saute garlic, carrots, green onion and rest of the ginger in olive oil. Add coucous and flavour with tabasco. Pour broth and take from fire. Set aside and season with curry, salt, pepper and honey.

Put the casserole dish in the pre-heated oven for about 8 minutes at about 70°C . (I needed more(10min.) because my filets were big.) If you think your tuna could change now lightly his colour you take the dish out of the oven. Because you only want that your tuna is warm and you don't want to cook it. If it’s hot he will change his colour. In the picture of the orginal recipe I think the tuna was in a to hot oven;)

While your tuna is in the oven you arrange the hot couscous on the plates. Take out the tuna pieces and place them on a bed of hot couscous. Serve immediately and enjoy!

You have with this recipe 2-5 minuts (depends how quick you chop, dice the vegetables;)) time for your dessert. You could serve for example vanilla ice cream with pumpkin seeds oil and sweetened or salted pumkin seeds:

When you are quick in chopping and you have stawberries you could prepare a strawberry salat with black pepper, honey and pomegranate sirup:
